The theme for this week’s Works for me Wednesday is what you make for dinner last minute and with limited ingredients. I’m not one of those really creative chefs so nothing earth shattering or extremely healthy but here are my last minute meals:
- Pancakes and eggs. This is always my go-to that the kids love and eat well. I just follow the recipe on the Bisquick box and do sunny side up fried eggs.
- Either spaghetti or fettuccini alfredo. Just the noodles, meat and some bottled Prego or Alfredo sauce.
- Tuna patties (like salmon patties but with tuna), mac & cheese and beans. Just mix 2 cans of tuna, 1 egg and half a sleeve of crushed saltine crackers together. Make patties out of them and then fry them in one stick of butter on the stove. Serve with boxed mac and cheese and bake beans.
- Tomato soup and grilled cheese.
I guess that’s the basics of my quick and easy meals…it works for me!
